One of my teachers today asked me to help him look up about RedWood Plank Cooking. So i got on the internet and only found recipes for salmon which is what he is grilling. However, he was wondering what you need to use to pre treat the plank before you cook. Olive Oil seemed to be mentioned but does he do this on both sides and does he need to do anything else. Any info would help, maybe i'll pass, lol. Thanks in advance.
Soak the plank for 24 hours before using it. If you are grilling the salmon on the plank on a standard grill, use very low heat. DO NOT USE olive oil on the plank unless you want to start a bonfire on your grill! You can use olive oil in the marinade or lightly coat the fish. Here's a recipe for a marinade I really like:
2 Tablespoons Olive Oil (Extra Virgin)
3 Tablespoons Whiskey or Bourbon
1 Tablespoon of Honey or Brown Sugar
1 Tablespoon of Soy Sauce
1/2 Tablespoon Ground Ginger ( you can use the Sushi type Ginger Slices Too)
Pepper to taste
2-lbs. Salmon Filet (skin on is easier but both types work)
1/2 tsp. of lemon juice
Combine all your ingredients except the lemon into a bowl and marinate the salmon for 20 minutes up to an hour. Put on the plank (skin side down)
and "smoke it" on low heat for ten minutes or until flaky.
A couple other tips:
1) Make sure you soak your plank at minimum overnight. you can fill up the sink and put a can on the plank to keep it submerged.
2) Let the plank heat up before putting the fish on it. The plank sholud start smoking but not catch on fire.
3) NEVER OVERCOOK FISH! Flaky is all you're looking for. If it is dry and stringy, you went too far.

Most important thing to follow in psac's recipe: MAKE SURE YOU SOAK THE PLANK FOR 24 HOURS!!! I soaked it for about six hours the first time I grilled fish on a plank... I put the fillet on the plank, walked away for 5 minutes and came back to 2' flames... And trust that marinade recipe, psac should quit the sport of fishing and become a gourmet chef...
