View Full Version : Anyone enjoy eating the salmon u catch in the river?

Hi i have never eaten a king or coho salmon from the river but heard they have no taste. Does anyone like to eat them.

yes I eat everything. Fresh, not frozen. Cut the brown meat out, the fillets are still big after that. Marinade in Buffalo wing sauce , then grill. You can marinade in anything, but once it starts to get old from sitting in the fridge I marinade in OJ. Then pour the marinade into the frying pan and it carmelizes and completely masks the old fishy smell and taste.

Smoked, I like to make Smoked Salmon salad like Tuna Salad. Thats very good too.

Secret is to get rid of the brown meat, just like bluefish.

HAs anyone gotten there fish smoked at the smokehouses there .. any good ?

IMO - if you get a fresh Coho go for it...

Give me a walleye or a perch - now they are good eating...

we were up on the weekend and swapped some fresh for smoked from the fish on cleaning station very good flavor.

I marinate mudsharks in cheap italian dressing for a couple hours then grill them. Also like em smoked.

get them fresh, no black ones, cut the dark meat off, soak them in IT dressing for a hour and cook them on charcoal grill.

Smoked with Applewood is good too

My buddy ate a 4" x 4" filet with some wasabi & soy sauce.....he said it was the best sushi he had ever had!!!

I agree with Furry and DMS with the Italian Dressing. It is the only way I like it. It also has to be cooked over a charcoal grill too. I cook it wrapped in aluminum foil while I cook it. Who am I kidding, that is the only way my wife cooks it for me, she will let me cut my vension into steaks (she even helps with that) on the kitchen table, but won't let fish get cooked in her house. I will definetly try the buffalo wing sauce this year.

Try Goya's Mojo Criollo marinade. Marinade it for three hours. Any longer and it will over-power the fish. Then put it on a hot grill for about 10 minutes.....YUM!

The marinade is a bitter orange, lemon, onion and garlic flavor.

yeah man, fillet the S.O.B., cut the nasty fat out ( that would be the dark brown crap you see from the skin side of the fillet ), soak the fillets in brown sugar for 24 hours and grab some of yer favorite wood and smoke the bastidges.....when about 2 hours away from done I give them a good going over with honey and then eat like nuts till you either puke or glow in the dark from the mercury or die from PCB poisoning.....ahhhh what a life! :D

Hey....as long as you don't eat more then a couple of pounds per week you should be fine. You don't need to worry about breastfeeding ....right?:D

I think this recipe is going to beat Ace's.
Get a whole fillet of king and seasoned well with your favorite stuff.
Go out and find fresh cow manure and cover the entire fillet.
Put the fish in the oven and bake it at 375 F for about 35 minutes or until the "crust" is kind of hard.
Take the food from the oven and carefully break the crust with a knife or your hands if you want.
Throw the fish fillet in the garbage and EAT the Manure!!!!

I don't know smoked, grilled, or baked i think if you prepair it correctly as described before it all tastes pretty good. The key is in the fillet, cut out the belly meat and brown.
Now granted I have had some really bad tasting salmon don't know why but had to pitch the whole thing wouldn't feed it to the dog even, but that is far between.
As for smoking hard or soft smoking most of the time it works well I like it cajun style. Had some steelhead a bout three years ago from PA from PoorRichards for those who fish out there and fell in love with it smoked cajun. Mine is no way as goods as theirs was but close and salmon I do the same way when i bring some back.

Only smoked is the way i eat mudsharks,,,but i give plenty away down here to people who love it:eek: ...one time down below 2a there were 4 japanese guys they caught a female stripped her eggs out and ate them right there with cold vodka,,yummy huh,,they did keep the fish too>))>

Yeah, i'd be pretty careful about do-it-yourself salmon sushi. Salmon is notorious for picking up parasites that they get while in freshwater areas (like rivers they ascend to spawn, or the Great Lakes). While trained sushi chefs are skilled at examining and feeling the meat to screen for parasites and their eggs, the average person can't do that with any degree of success or confidence. If you want to make sushi, stick to purely saltwater species. Or else you may come back from a SR trip dealing with a case of "the gift that keeps on giving".

My favorite on Mudsharks is to use Chef Paul Pruhdomes Blackened Redfish Magic. Most stores carry it. Baist the fillet in melted butter, sprinkle with this stuff generously and then grill. For this style I prefer to keep the skin on and don't flip it on the grill. Comes off the skin nice and easy and tastes very good.

About 10 years ago i worked for an environmental lab and had a filet tested for PCBs (not the fatty part, the nice lean part) .... nearly shut down the instrument it was so high !

So id follow the recommended guidelines as to how much / week or month to heart.

Now thats a group of real fisherman, the vodka :p killed the nasty taste of those eggs -- All I can is thanks but no thanks for that snack do you have some tied up in sacs, I'm low on bait! :D

according to the book you get when you buy a license the portion of salmon, that you should eat, from Lake O. tribs = NONE.
