ok members, here is a question that i want an answer from everyone. do you eat the fish, salmon or steelie, from lake o? i read the ny reg. book and i believe it states that no portions of salmon from lake o. should be consumed per month.
if you do eat them how bout throwing a recipe on this post for the rest of us.

You are correct wooly. You should not eat any salmon from Lake O. If the book says it blatenly to eat none, I would take it seriously. The DEC does not play games when it comes to human health. They are at the top of the food chain and any pollutants in the lake will find their way into these fish. The steelies and browns are a little less toxic. I would have them smoked if I were to keep em. SalmonCrazy members, I urge you not to eat any of these fish. It is down right dangerous.

are cleaned can reduce the toxins in them also. I take some salmon for the smoker and I think they are very good that way. When I clean them, I fillet them. I remove all the skin and belly meat along with all the gray(dark) meat as this is where most of the toxins settle in the fish. I then brine them in ice water with salt, garlic and onion powder for 3 days. The salt also helps draw some of the toxins out of the fish. Then put them in a charcoal smoker @ 140 to 175 degrees until done and mmm good. I also put a glazing on them when in the smoker. Maple syrup, caro syrup, brown sugar, honey and mustard and heat on the stove to blend, don't overheat on the stove.

Seems like too much work to get rid of the toxins. I will stick with steak:D To each his own.

I watched a TV show about Lake Ontario, it showed how some of the baby cormorants are born with birth defects like badly crooked beaks, from their parents diet of fish from the lake. Kind of makes you think when you want to eat a Salmon.
That said I still keep maybe one fish per season. I do remove the lateral line and belly fat before cooking it, which is said to remove about 50% of the contaminants.
When it comes down to it, who is to say that the fish you buy in the grocery store isn't loaded with Mercury, etc. anyway?

LOL!!! I dont eat fish, well most fish;) , hope that means the twins wont be demon spawn!!!
Seriously, I think it is more of a CYA that the DEC puts out. So if some one gets real sick from eating fish they cant get blamed!!! Think of it this way, see all the people carrying full stringers of them out of the river every year??? If it were that bad for you to eat there wouldnt be as many snaggers on the rivers today!!!

I don't eat those fish from Lake O but my 83 year old Grandma loves them! She said that the fish can turn her in to a thermometer with all the mercury! Keep her stocked up! LOL!! So what does a good grand son do?? GO FISHIN'!!!!!!! LOL!!! ;) :D

I don't like the Salmon unless, they are prepaired by someone who knows how to cook Lake O. Salmon. Smoked is another story. The browns on the other hand can be excellent broiled with butter. I would like to see definative evidence on levels of toxins found in Lake O fish. In either case, bleed the fish immediately (this will make a big difference in taste) and cook them the same day if you want a good meal. Also, IMO I wouldn't eat any Salmon that is not fresh. The longer they stay in the river the more they decay and taste like the Mudsharks they are!

I usually smoke one or two a year and most of that is given away. If it worrys you dont eat it but most of what people eat these days is no good for you anyway!!! :eek:

Salmon "a la" River
Marinade
- The juice of 1 lemon
- 3 garlic cloves chopped
- 4 tbs Extra virgin olive oil
- salt and pepper
Mix all the ingredients together and marinate the salmon (the longer the better).
Ingredients
- 1 or 2 lbs. of salmon fillets (about 4 pieces will befine)
- 1 big yellow onion sliced
- 1 big bell pepper sliced
- 1 big fresh tomatoe sliced
- 1 can of cocconut milk
- 4 tbs of virgin olive oil
- 2 tbs of tomato paste
Salt and black pepper to taste
Procedure
- In a big sautee or frying pan add the olive oil, onions, peppers and tomatoes and sautee for 4 minutes. In the meantime mix well the cocconut milk with the tomato paste.
- Make room in the frying pan and add the salmon fillets (Do not discard the marinade) putting the onions, peppers and tomatoes on top.
- Add cocconut mixture, cover and cook in a medium high heat for 25 to 30 minutes or until the salmon is flaky and tender. Taste and adjust seasoning if necessary)
_ Serve with white rice and fried plantains or french fries.
NOTE: I made up this receipe last week with my last salmon from last year and it was delicious. I'm still alive and kicking!

effects of eating salmon probably won't take effect for years. Just like putting lead split shot in your mouth to crimp.:eek: Or like the effects of alcohol and tobacco.

20-years ago, we used to eat about 4 or 5 of the first fresh run. Since then reports and warnings became more and more specific and alarming...so it was take a picture and let 'em go. With that said, what few that come home...I give 'em to my mother-in-law now! Our fish come from the upper Delaware and small local streams (just a few trout here and there keep us going nicely and they are always prepared fresh...never seeing the inside of the freezer).
The only other fish that compares as table-fare to me is walleye, but even now you've got to check the warnings first for what body of water you're fishing. My best friend has got a killer "eye" recipe that I think he got out of an LL Bean cookbook. I think it's called "Deviled Walleye", but he does his on the grill and doctors the recipe a bit. But most certainly none come from Lake O or Lake Erie.
I guess the bottom line for us is...no thanks anymore...not when you've got a bounty of trout and walleye in your back yard that doesn't have a nuclear power plant built into it's ecosystem.

I usually keep about 1 REAL fresh coho a season. Then i go to stony's, buy a 6 pack and drink a beer while it gets filleted.
Then i just cut the fillets up into chunks then and shake and bake it. Usually the italian seasoning shake and bake. It isnt too bad that way.

I still get a kick out of all the folks who take the fish warnings to the soapbox but ignore the Surgeon General.
